Today is already so ..., I have recently returned from Budapest, the 'Paris of the East', from 1873 the capital of Hungary. A city known for its hot springs that the Danube – 'King of the rivers' – divided into two: 'Buda', the highest side of Trapani; ‘Pest’, the lower part and modern. An elegant European capital created by the union of three cities: Buda, Buda and Pest e – where the seat of the parliament and the largest synagogue in Europe, and the oldest underground 'Continental' (1896).

Well, in this cold February evening I decided to overcome the post-trip preparing melancholy a dish that I love: yl goulash Hungarian traditional (goulash). A soup of ancient origins made with beef and vegetables that once cooked-beinga outdoors in large pots placed directly on fire. Below carry-over recipe that was given to me by the chef dell'Ungarikum Bisztró, a typical restaurant in the center of Budapest where I had the pleasure of dining.

Traditional Hungarian Gulyás

Ingredients:

• 400 grams of beef into cubes
• two tomatoes
• two carrots into rounds
• a yellow pepper, chopped
  
• two chopped onions
• 2 patate be a
• means of celery stalk
• a clove of minced garlic
• a tablespoon sweet paprika
• two tablespoons of extra virgin olive oil
• two liters of water
• salt and pepper

Preparation:

Saute the chopped onions, then add the meat over high heat rosolandola. Add salt, pepper and ground cumin seeds, stirring continuously. Add the tomato, the pepper, garlic and paprika. Deglaze with about two liters of water, and bake at moderate heat for about 90 minutes. When the meat is almost ready to add the other vegetables and cook for another ten minutes.

The traditional Hungarian Gulyás is served with small dumplings of dough called 'csipetke'. They are prepared by making a dough with an egg, one hundred grams of flour and a pinch of salt. Cook them in boiling water for several armed, drain and add to the soup.

I must admit that when I was offered a trip to Saranda – town south of Albania new frontier of tourism low-cost – then and there I was a bit 'puzzled. A destination that is not considered and has never particularly interested me. A city in a non-EU nation whose political situation of recent years has not contributed positively for tourism. But things are starting to change. The beauty of its coastline and tourist packages at affordable rates are helping to make Albania a new frontier of tourism low cost. Well, made these considerations, After some research and watching some videos, curiously I did not hesitate to go.

 Once arrived in Saranda my expressionIt is returned to being puzzled.

The view of the coastline disfigured by rows of palaces, one behind the other, for sure it was not aroused a positive impact. A framework certainly not among the most beautiful that made me think of a race to a reckless tourism, exploiting the resources regardless of which each territory needs dell'equilibro. A first rather unpleasant impression I hin fact think of a settlement of the new rich of the post-communism. Entrepreneurs of the new capitalism linked to old beliefs of the past, that quite yet it is not actually. Yet after a week stay I can say I visited, albeit for a small part, a country with beautiful beaches whose memory has been undermined by a long dictatorship. A country in which the presence of a witness to history bunker far exceeds the religious buildings, mostly destroyed during the regime.

Here are some of my nature and gastronomy?.  

Saranda, a coastal city with archaeological sites and beautiful pebble beaches and sand, with comfortable lidos. As a particularly lively night, maybe for my taste a bit 'too. Certainly an ideal destination for those who love the sea and nightlife.

They call it 'black eye', actually the exact name is Blue eye. A karst spring sixteen km from Saranda with a constant year-round temperature of ten degrees. Bathe in its crystalline waters I assure you that it is highly refreshing!

Ksamili certainly remain the Albanian seaside town of which I will have more nostalgic. His white beach, The color of the turquoise sea, and four small islands overlooked, They have donated moments of comfort and true emotion. Located about seventeen kilometers from Saranda is a very essential step!

Gjirokastra, a historic village located sixty kilometers from Saranda and forty from the border with Greece. A city recognized by UNESCO World Heritage Site of the oldest in Albania, to stroll between stone houses and local artisan shops.

Although the Albanian traditional cuisine is more related to meat preparations, during my stay I have tasted really well-made fish dishes.  Among the local specialties I appreciated Albanian fried food of cheese or curds, a dish made with ricotta, Red peppers, tomatoes, onions and spices are cooked together. The final product is a thick sauce, that accompanied with a little 'bread is really delicious. As for the local wine tasting after several attempts I gave up. Really a company understand the provenance and origin… not to mention the wrong temperatures that are served. Alas… here the time is not yet ripe for the tasters.

In conclusion ... What I liked most and what less than Saranda.

What I liked most? No doubt the beaches and the color of the sea.

What I liked less? The improvisation in welcoming tourist and the reckless. Not to mention the condition of the road surface and the waste management. Walking requires a careful look on the ground to not run into holes and anything else.

What would? Certainly needed investments in tourism services, in strengthening totally inadequate public transport, in road safety and particularly in hotel training in toto. The fact remains that the Albanian Riviera is the country a very important economic sector. The way I saw it, It is serving still at least a decade of good practices. If that happens, There are good prospects for economic improvement of a country with an average income per capita 300/400 € monthly.

Recalling Seville, Plaza of Spain e il Salmorejo.

"In Seville, people smile ..." A phrase that told me a young woman returning from one of his study in this Andalusian city travel. A nostalgic memory that I expressed a bit 'of sadness, because the smiles coming year after year in Italy he always saw less.

This was the spring that convinced me to schedule a trip inin capital dell'Andalusa whose ancient logo - NO8DO - it is a symbol of loyalty. Two and a half hours flight from Bergamo Airport have allowed me to reach my goal, another dream realized. I must admit that when I arrived there and then I was a little 'disappointed due to abrupt early Sevillian I crossed. Actually to acclimate seriously you need to adapt to their pace. Practically, It means not to go too fast, especially if you visit the city in summer, when the temperatures are very high. From a gastronomic point of view, I must say that in Seville I really enjoyed the constant presence of a bottle of olive oil on the tables in a variety of eateries, from simple bar at the restaurant. A tradition from which we should take a cue to spread the culture of this great health benefits.

There is another tradition in offering gastronomic Sevillian that I liked: the preparation of a typical dish very suitable for the hot climate of these parts, the Salmorejo. An Andalusian soup made from ripe tomatoes and stale bread that, served cold, It is a welcome relief in the heat of summer days.

It is prepared by mixing in a blender 100 grams of dry bread, previously put to soak in water, with 500 grams of ripe tomatoes and a garlic clove. I have made a small change to the recipe by adding a few drops of Tabasco, to give that touch of spice that I love. Once you obtained a homogeneous cream storing it in the refrigerator for a few hours. The Salmorejo should be served with some slip of jamon, cured ham and boiled eggs. Serves three people.

Well, during my trips to Seville I have done several times this summer with a soup, concluding the meal with another habit that Italy unfortunately it is a bit lost: a good glass of Vermouth. An aromatic liqueur wine whose history has origins in Piedmont. He was born in Turin in fact 1786 from an idea by Antonio Benedetto Carpano that I mix of muscat wine with spices and herbs. To be defined as such it must be made from 75% Wine and good dose of artemisia, a plant from the many beneficial virtues. I just have to say goodbye and Seville… Health!

Lanzarote, l’isola dei vulcani, del vento e delle case bianche.

Ci sono immagini di terre che si fermano nella mente, e che colpiscono l’immaginario al punto da condurci nei luoghi da cui sono tratte. Esattamente ciò che mi è successo dopo aver visto alcuni scatti fotografici di Lanzarote. Mi riferisco in particolar modo ai suoi caratteristici vigneti. Piantati su terra lavica in profonde cavità, sono riparati dal vento grazie a muretti semicircolari di pietra vulcanica chiamati ‘zoco’.

Un paesaggio unico, emozionante e davvero suggestivo.

Salendo verso Orsola il paesaggio si trasforma. Dune grass and bushes white sand between blocks of lava flows preserve charming coves, tra cui beach Caleton Blanco. Una tra le spiagge più belle di Lanzarote… a glimpse of the colors of the sky.

Cueva de los Verdes

Mojo verde

And here is one of the flavors that I like the most in Lanzarote: green mojo. A typical sauce is easy to prepare that strongly advise against those who do not like garlic. Isola 'Graciosa’

Seven women on tour in Lisbon, seven different personalities, a single apartment. These were the assumptions of my last vacation. Quite a challenge to women won thanks to the diversity combined with respect and intelligence. Una capitale europea che da tempo avevo programmato di visitare, not only for its artistic and natural beauty, but also for the curiosity linked to the news of the many Italian, in particolare pensionati, che hanno deciso di trasferire qui la loro residenza attratti dalle allettanti agevolazioni fiscali. Accordi bilaterali che permettono di ricevere per dieci anni la pensione al lordo.

Quello che vi posso dire, è che nonostante il notevole afflusso di turisti italiani, la nostra lingua è quasi del tutto sconosciuta, e per lo più assente nelle guide e nelle indicazioni turistiche. Chi si vuole trasferire per ragioni economiche, deve avere una certa padronanza con la lingua inglese, and especially, deve considerare l’eventualità di spostarsi nelle aree limitrofe della città, certamente meno care di Lisbona, ma più legate alle tradizioni locali.

Si tratta semplicemente di un richiamo per farvi avvicinare, e per offrire, a voi e a tutti i passanti, the taste of some typical sweets. Una bella abitudine che favorisce lo scambio di un sorriso, e che mi ha permesso di sentirmi meno estranea in un paese che non è il mio.

Our holiday ended with a stop in Cascais, rinomata cittadina turistica – un tempo villaggio di pescatori – situata a 30 km da Lisbona. Dopo aver passeggiato nelle eleganti vie del centro, costeggiando le dune del lungo tratto di spiaggia selvaggia, we headed towards the Boca do Inferno. Una catena rocciosa caratterizzata da una natura incontaminata e da panorami mozzafiato, che ci hanno emozionato ancora una volta, e che hanno reso questa vacanza vissuta in amicizia e in allegria, unica e indimenticabile.

Museo di Apoxyòmenos

Alla fine ho deciso e sono partita…

Ho preso un traghetto da Trieste e con un gruppo di persone che amano fare trekking nella natura, guardando il mare dopo qualche ora sono arrivata. Insieme abbiamo camminato a lungo seguendo i tantissimi sentieri presenti sull’isola. One, perché Lussino è un luogo da vivere in cammino. Un’oasi verde per chi ama la natura e la vacanza attiva. Un posto per pensare, where the breath becomes slow and the right rhythm resumes. Where passersby stop to make gods “ometti”, piccoli cumuli di pietra che indicano la giusta direzione. Quando si programma un viaggio è giusta consuetudine informarsi, un modo per prepararsi agli usi e alle abitudini locali. Per questo prima di partire amo fare qualche ricerca che oltre a rendere piacevole l’attesa, mi permette una prima conoscenza del luogo che andrò a visitare. Il mio ultimo tour è stato in Slovenia, una terra che avevo conosciuto anni fa, e che mi aveva colpito per l’ordine, per la natura rigogliosa e per gli antichi borghi costieri. Non conoscevo però Lubiana, la sua capitale, una città che dopo aver visitato mi è rimasta nel cuore.

La Slovenia, una nazione coinvolta sia pur brevemente da una guerra che tutti, even if not directly involved, ricordiamo per la ferocia. Una nazione che ha saputo velocemente prendere le distanze da un conflitto che ha flagellato le terre dell’ex-Jugoslavia. Se avrete occasione di visitarla non vedrete tracce sul territorio, ma solo nei cuori della gente. Una delle tante guerre vicino a noi che ci rende increduli delle barbarie che il genere umano sa mettere in atto per il proprio egoismo.

Un paese ordinato e ricco di storia con una capitale, Lubiana, dominata dal castello sulla collina di Grajski. Una città nominata “capitale verde d’Europa 2016” che mi ha coinvolto emotivamente grazie alle sue peculiarità.

Every day, tranne la domenica, lungo il fiume Ljubljanica è presente il mercato centrale all’aperto con frutta, verdura, bread, formaggi e altri generi alimentari freschi provenienti dalle fattorie slovene. Una città attenta ai bisogni della gente, con un’ampia offerta culturale e percorsi per chi ama passeggiare e vivere a contatto con la natura.

La posizione geografica e la presenza di un fiume navigabile ha favorito nei secoli il suo sviluppo. In 1895 fu devastata da un forte terremoto. Fu il noto architetto sloveno Jože Plečnik che gli ridiede vita arricchendola di obelischi, colonne e architetture dallo stile barocco, fino a farla diventare una tra le più belle capitali europee. Il drago, presente sullo stemma e sulla bandiera, è il simbolo della città.

Lubiana di notte

Le città vanno vissute di giorno e di notte, il miglior modo per conoscerle in tutti i loro aspetti. Nonostante il freddo pungente nei miei giorni passati a Lubiana, non potevo perdermi le luci notturne del suo centro storico meravigliosamente illuminato. Sia pur infreddolita, ho passeggiato per le sue vie accompagnata dal suono di un violino in lontananza. Momenti indimenticabili che danno un senso speciale alla vita.

Conoscere un luogo richiede cammino e contemplazione. Solo così si possono scoprire scorci suggestivi e meno conosciuti. Il mio tempo passato a Lubiana è stato breve, per questo salutandola mi sono ripromessa di tornare.

Grotte di Postumia

Ventisei km, di cui quattro visitabili, tra grotte e gallerie in compagnia del ‘proteo’, a blind and albino animal of about fifteen centimeters which lives up to one hundred years only in these habitats. From 1819 oltre trentasei milioni di visitatori sono passati da qui. All’interno la temperatura, tra gli 8 and the 10 degrees, è costante tutto l’anno. Visitandole una sola raccomandazione: non toccare con le mani le stalattiti (gocciolante dall’alto) e le stalagmiti (goccia dal basso). Il grasso naturale presente sulle nostre dita le farebbe morire.

Castello di Predjama

In Slovenia una sosta d’obbligo per chi ama le dimore storiche è al Castello di Predjama. Una costruzione spettacolare incastonata tra le rocce che incanta i visitatori. La leggenda racconta che nel 1400 il cavaliere Erasmo, ricercato e condannato a morte, trovò rifugio in questo luogo inespugnabile.
